June 30, 2012

I am just now getting around to posting this spectacularly good blueberry shortcake.  We enjoyed it on Father’s Day, and I would classify this dessert as lick-the-plate worthy!

Black Bean and Couscous Salad

June 28, 2012

As far as I’m concerned, you can never have too many go-to summer salads.  This fabulous southwestern-flavored black bean and couscous salad is a favorite of mine.  Not only is it absolutely delicious with its fresh Mexican-inspired flavors and colorful vegetables, it is quick and easy to prepare.  Did I mention that it’s healthy as [...]

BBQ Sauce

June 21, 2012

With barbecue season in full swing, I thought I’d share this easy peasy recipe for homemade BBQ sauce.  I’ve made homemade BBQ sauce just once before, and it didn’t come close to rivaling my favorite, Sweet Baby Ray’s.  This one does—there is a nice balance of sweet, spicy, and smoky going on.

Biscoff Crunch White Chocolate Chip Cookies

June 7, 2012

In case you haven’t noticed, recipes using the Biscoff spread as well as Biscoff cookies are sweeping through the blogosphere.  For the uninitiated, Biscoff cookies are the Belgian spice cookies known as speculoos which a couple of airlines hand out to passengers.  “Biscoff” loosely translated stands for “biscuits” and “coffee,” and you should know that [...]

Pesto Spaghetti Squash

June 4, 2012

Last week, two of my colleagues came in to work and said that they each had, coincidentally, made spaghetti squash the night before.  Both of them talked enthusiastically about how really good it was, and it didn’t take long before several of us were talking about making it for a group lunch at work.
