Strawberry Salsa

July 9, 2012

It’s the rare occasion that I make something from Family Circle magazine, but the July issue featured a couple of recipes that I made within 24 hours of first spotting them.  We enjoyed both recipes on Father’s Day—a wonderful blueberry shortcake and this excellent strawberry salsa.

Sara’s Energy Balls

July 7, 2012

I am always looking for healthy snacks to keep me on the straight and narrow in between meals.  My daughter Sara is like-minded.  She found a recipe for these energy balls on Pinterest and tweaked it to her liking.  Sara has said on more than one occasion that if she didn’t get into medical school [...]

March 20, 2012

Since we don’t have in-house food service where I work, I quite often order from Panera when I need to cater a business lunch.  Panera offers box lunches and will deliver to the office so it works out well.  Their food is fresh, if not always low calorie, and a popular choice around here as [...]

Sloppy Joes

February 2, 2012

My girls have been after me to post more College Corner recipes for them and their friends at school.  While they were home on winter break, Sara made our favorite sloppy Joes for supper one night; and we all thoroughly enjoyed them with some hasselback potatoes and a big green salad.

Brussels Sprouts

January 17, 2012

While the girls were home on break, I decided to roast some Brussels sprouts as a side veggie to go with our steaks for dinner.  When my daughter Amy saw me take the Brussels sprouts out of the fridge, she told me she had found a really good recipe and had made them while at [...]
